Elderflower Champagne

Gran and Pops decided
to teach me ‘nature’ words,
so took me to the field last spring
and showed me loads of birds.

We walked along the hedgerow,
Gran noticed all the flowers
then pointed to a froth of white
and clapped and said That’s ours!

An effervescence Gran said
Like bubbles I agreed
We’ll make some fizzy pop she said
Let’s pick the ones we need.

We took our sacks of blossom home
and filled a massive bowl
with sugar, water, lemon juice,
and dunked the flowers in whole.

Overnight, the magic worked -
we sieved and strained our drink
and poured it into bottles
and stacked them by the sink.

In turns into champagne, Pops said
Effervescent, fizzy -
But not right now, you have to wait.
Forget it. Just keep busy.


Then one day we heard a Bang!
Explosions – Pop, Pop, Pops!
The kitchen door was being attacked
by glass and bottle tops.

We never got to drink it,
next May we’ll try again,
to make my favourite undrunk drink
Elderflower champagne!
